  • 1 package Cholula® Al Pastor Seasoning Mix
  • 1/4 cup white vinegar
  • 2 tablespoons oil
  • 2 tablespoons water
  • 1 pork tenderloin (about 1 1/4 pounds), halved lengthwise and cut into thirds
  • 6 fresh pineapple rings, patted dry
  • 1/4 cup chopped red onion
  • 6 each (6-inch) flour tortillas, warmed
  • 1/4 cup chopped fresh cilantro

  1. Mix Seasoning Mix, vinegar, oil and water in medium bowl. Reserve 2 tablespoons of the marinade mixture; set aside. Place pork and remaining marinade in large resealable bag, turning to coat well. Refrigerate 30 minutes. 
  2. Heat grill on medium-high. Remove pork from marinade. Grill 4 minutes per side or until internal temperature reaches 145°F, brushing with reserved marinade during last 2 minutes of grilling. Grill pineapple rings alongside pork, just until tender and lightly charred on both sides.
  3. Remove pork from grill and let rest 3 minutes; cut into thin slices. Meanwhile, chop pineapple and mix with red onion in small bowl. Serve pork in warm tortillas topped with pineapple mixture and sprinkled with cilantro.
