- 1 package Cholula® Pork Carnitas - Mild Seasoning Mix
- 3 pounds boneless pork shoulder roast, trimmed and cut into 2-inch chunks
- 1/2 cup water
- 1 tablespoon vegetable oil, plus more as needed
- 24 (6-inch) corn tortillas
- 6 cups Shredded Oaxaca or mozzarella cheese
- Cholula® Chipotle Hot Sauce
- Shredded lettuce, to serve
- Cholula® Original - Medium Salsa, to serve

Instructions
- Prepare carnitas in Instant Pot® as directed on Carnitas Seasoning Mix package.
- Heat 1 tablespoon oil in skillet or comal over medium heat. Place 1 tortilla in skillet, spread 2 tablespoons of the cheese evenly onto one half of the tortilla. Spoon 1/4 cup warm carnitas on top and drizzle with Chipotle Hot Sauce. Sprinkle with an additional 2 tablespoons of the cheese. Carefully fold tortilla to enclose filling. Cook until golden brown. Flip and cook until golden brown on both sides. Continue with remaining tortillas, adding additional oil as needed.
- To serve, top each quesadilla with shredded lettuce, Original Salsa and additional Hot Sauce, if desired.
