- 1 package Cholula® Al Pastor Seasoning Mix
- 1/4 cup white vinegar
- 2 tablespoons oil
- 2 tablespoons water
- 1 pork tenderloin (about 1 1/4 pounds), halved lengthwise and cut into thirds
- 4 fresh pineapple rings, patted dry
- 2 cups hot cooked white rice
- 1 cup black beans, warmed
- 1 cup shredded romaine lettuce
- 1 cup pico de gallo
- 1 cup crumbled queso fresco
- 1 ripe avocado, pitted, peeled and chopped
- Pickled red onions (optional)
- Cholula® Cremosa, such as Cotija or Chipotle

- Mix Seasoning Mix, vinegar, oil and water in medium bowl. Reserve 2 tablespoons of the marinade mixture; set aside. Place pork and remaining marinade in large resealable bag, turning to coat well. Refrigerate 30 minutes.
- Heat grill on medium-high. Remove pork from marinade. Grill 4 minutes per side or until internal temperature reaches 145°F, brushing with reserved marinade during last 2 minutes of cooking. Grill pineapple rings alongside pork, just until tender and lightly charred on both sides. Let pork rest 3 minutes, then cut into thin slices. Chop pineapple into bite-size pieces
- To assemble, divide rice evenly among 4 serving bowls. Top with sliced pork, pineapple, beans, lettuce, pico, queso fresco, avocado and pickled red onions, if desired. Drizzle generously with your favorite Cholula Cremosa, to serve.
