Portobello Fajitas

Things are heating up at the dinner table tonight … we’re cookin’ fajitas! This version is made with simple, tasty ingredients, including the bold flavor of McCormick® Organics Fajita Seasoning Mix. A hearty portobello, onion and pepper filling is the perfect meat substitute to make this easy meal vegetarian-friendly. Serve with toppings including salsa, guacamole, Cheddar cheese and more.

  • Heat 1 tablespoon of oil in large skillet on medium-high heat. Add mushrooms; cook and stir 3 minutes. Remove from skillet. In same skillet, heat remaining 1 tablespoon oil. Add onion and bell pepper; cook and stir 3 to 5 minutes. Return mushrooms to skillet.

  • Stir in water and Seasoning Mix. Cook and stir 3 minutes or until slightly thickened.

  • Spoon into tortillas. Serve with desired toppings.
