- Baja Chicken
- 1/2 cup plus 2 tablespoons Lawry's® Baja Chipotle Marinade with Lime Juice
- 1 large jalapeno pepper, seeded and finely chopped
- 2 tablespoons chopped fresh cilantro
- 1 1/2 pounds boneless skinless chicken breast halves
- Black Bean and Mango Salsa
- 2 tablespoon Lawry's® Baja Chipotle Marinade with Lime Juice
- 1 can (15 1/2 ounces) black beans, drained and rinsed
- 1 medium ripe mango, peeled, seeded and chopped
- 1 medium tomato, chopped
- 2 green onions, thinly sliced
INSTRUCTIONS
- 1 For the Chicken, mix marinade, jalapeno and cilantro in medium bowl. Place chicken in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade mixture; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.
- 2 For the Salsa, mix beans, mango, tomato, onions and 2 tablespoons of the remaining marinade mixture in medium bowl; toss lightly. Set aside. Remove chicken from marinade. Discard any remaining marinade.
- 3 Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with remaining marinade mixture. Serve chicken with Black Bean and Mango Salsa.
