1Generously coat roast evenly on all sides with Rub. Let stand at room temperature up to 30 minutes to let roast absorb the flavor of the Rub.
2Preheat your grill for indirect medium-low heat (about 300° F.). Place empty foil pan underneath grates on unlit side below roast to catch juices for basting. For extra smokiness, you can add some wood chips in a smoker box to lit side of the grill.
3Place the roast with the rib side down directly on grill grates. Grill 2 ½ to 3 ½ hours or until desired doneness, turning occasionally. Internal temperature should be 115ºF for rare; 125ºF for medium rare and 135º for medium.
4Remove roast from grill and baste with juices, if desired. Let stand 15 minutes before slicing.
