Stubb's Famous 3-Step Method with Chicken

  • 1 Rub chicken generously with Stubb's BBQ Rub. If using breasts with skin on, be sure to put some rub under the skin so that the flavor absorbs into the meat. Let chicken rest for 15 minutes before cooking.
  • 2 Prepare grill for indirect medium-low heat (250°F to 325°F). Grill chicken 1 to 1 1/2 hours over indirect heat or until internal temperature reaches 165°F, basting with Moppin' Sauce every 15 to 20 minutes while cooking. (Adjust how often you baste according to your taste!) When cooking over indirect heat, no need to turn the meat.
  • 3 Once the chicken is cooked to 165°F , remove from grill and let stand 5 minutes. Serve with plenty of Bar-B-Q Sauce.
  • 4 Note: To maintain medium-low heat (250°F to 325°F), keep lid closed and adjust lit burner as necessary. Preheat grill by turning all burners to high with lid closed. Turn off burner(s) on one side of the grill. Turn burner on the other side to medium-low. Directions were developed using a gas grill. Grills vary; cooking time is approximate.

    For a charcoal grill, push hot coals to one side of grill and place chicken on other side. Adjust air flow or add more charcoal as needed to maintain heat.

    Don't have time for low and slow? You can still use the 3-Step method with boneless chicken breasts and direct heat cooking. Prepare chicken as directed, but for STEP 2, cook chicken over medium-high heat 5 to 6 minutes per side, basting each side once during cooking, until chicken reaches internal temperature of 165°F .
