Heat oil in large skillet on medium-high heat. Add chicken and onion; cook and stir 5 minutes or until lightly browned.
Stir in spices and remaining ingredients until well blended. Bring to boil. Reduce heat to low; simmer 10 to 15 minutes, stirring occasionally. Serve with assorted toppings, if desired.

I like this version instead of the McCormick spicy white chicken chili packet because I can control the spice. I also like to add fire-roasted red bell peppers and corn to it. So good!

I should add that I made this chili for a fund raiser and work and this was the first chili to sell out.
