  • 2 cups water Substitutions available
    • chicken stock
  • 1 package McCormick® Instant Pot® Chicken, Broccoli & Rice Seasoning Mix
  • 1 pound boneless skinless chicken breast, cut into 1-inch chunks Substitutions available
    • boneless skinless chicken thighs, cut into 1-inch chunks
  • 1 cup uncooked long-grain white rice
  • 2 cups frozen broccoli florets
  • 1 cup shredded Cheddar cheese, divided
  • 1/2 cup milk

Instructions

  • Spray pot with no stick cooking spray. Add water and Seasoning Mix. Whisk until well blended. Stir in chicken and rice. Close lid. Set Valve to Seal.

  • Select PRESSURE COOK (MANUAL); cook 8 minutes on HIGH PRESSURE.

  • Meanwhile, steam broccoli in microwave according to package directions. Set aside.

  • When chicken and rice are done, quick-release the pressure. Open the lid once pressure inside the pot is completely released. (Check manufacturer’s manual for safe operating instructions.) Stir in steamed broccoli, 1/2 cup of the cheese and milk. Sprinkle with remaining cheese. Let stand until cheese is melted.

  • TO PREPARE IN THE SLOW COOKER:
    1. Place water and Seasoning Mix in slow cooker. Whisk until well blended. Stir in chicken. Cover.
    2. Cook 4 hours on LOW or 2 hours on HIGH.
    3. Stir in rice and frozen broccoli. Cook 1 hour longer on HIGH or until rice is tender. Turn off slow cooker. Stir in 1/2 cup of the cheese and milk. Sprinkle with remaining cheese. Let stand until cheese is melted.
