Grilled Veggie Skewers

The bright and citrusy flavor of McCormick® Flavor Maker Veggie Topping Seasoning shines in this simple recipe for grilled vegetable skewers. Prepare with the recommended veggies, or whatever you have on hand in your fridge waiting to be used up.

INGREDIENTS

Ingredients

  • 3 tablespoons oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Flavor Maker Veggie Topping Seasoning
  • 1 medium red or green bell pepper, cubed
  • 1 medium red onion, cut into wedges
  • 1 small yellow squash, sliced 1/4-inch thick (about 1 cup)
  • 1 small zucchini, sliced 1/4-inch thick (about 1 cup)

INSTRUCTIONS

  • 1 Mix oil, vinegar and Flavor Maker Seasoning in small bowl. Place veggies in a large resealable plastic bag. Add marinade, turning to coat well.
  • 2 Refrigerate 30 minutes or longer for extra flavor. Remove veggies from marinade. Reserve remaining marinade for brushing. Alternately thread vegetables onto skewers.
  • 3 Grill skewers over medium-high heat 8 to 10 minutes or until veggies are tender, turning occasionally and brushing with remaining marinade.

    Test Kitchen Tip: If using wooden skewers, soak thoroughly in water for at least 30 minutes before threading with beef and vegetables. This prevents them from burning when on the grill.
