Once opened, coconut milk/cream can be kept in the refrigerator in a sealed container for 4 days and can be frozen in a freezer safe container for up to 3 months.
Canned coconut milk naturally separates and solidifies, and it is not unusual for a can to sometimes be completely solid or have a “cottage cheese” consistency. This is due to the high fat content of our premium coconut milk and the fact that we do not dilute our product. Changes in temperatures during storage (both in warehouse and in the pantry) can accelerate this hardening. Solidification of this product does not indicate that the product has spoiled. If the product is solid when you completely remove the can’s lid, you can warm up the coconut milk to get it back into liquid form and give it a good stir.
While the consistency of your container of coconut milk maybe waterier than what you expected, this is not unusual, especially in warmer weather. Coconut milk is made of water and coconut fat. Coconut fat has a very low melting point, and in warmer conditions it will liquify quickly so that the contents will appear watery. When temperatures are cooler, there will be a separation and solidification of the coconut fat, so the coconut milk looks thicker. To help make your product more like what you are used to, you can put it into a refrigerator until it is thoroughly cool and starts to separate or use a blender to give it a thicker consistency.
