Ingredients

  • 2 tablespoons vegetable oil
  • 1 package (7 ounces) El Guapo® Melon Seed Pasta
  • 1 medium white onion, finely chopped
  • 3 medium garlic cloves, finely chopped
  • 2 cups chicken stock, divided
  • 1/2 teaspoon salt
  • 1 tablespoon fresh cilantro, finely chopped

INSTRUCTIONS

  • 1 Heat oil in medium saucepan on medium heat. Add pasta; cook and stir until golden brown, about 3 to 5 minutes.
  • 2 Stir in onion; cook 3 minutes or until softened, stirring occasionally. Add garlic; cook 30 seconds until fragrant. Stir in stock. Bring to boil. Reduce heat to medium-low; simmer 10 minutes until pasta is tender and most of the liquid has been absorbed. Stir in cilantro and sprinkle with crumbled Cotija to serve, if desired.
