Instructions
- Preheat oven to 400°F. Place potatoes directly on the oven rack. Bake for 45 to 50 minutes or until tender.
- Meanwhile, brown meat in a large skillet on medium-high heat. Drain fat. Stir in Seasoning Mix and water. Bring to a boil. Reduce heat to low; simmer for 5 minutes, stirring occasionally.
- Remove potatoes from the oven. Carefully slit the top of each potato with a small knife. Pinch the ends gently to open the potato. Spoon about 1/3 cup of the meat mixture onto each potato.
- Serve with desired toppings, such as shredded cheese, shredded lettuce, sour cream, chopped tomato, avocado, hot sauce, or green onions.
Test Kitchen Tip: For a quick weeknight meal using leftover taco meat, pierce potatoes as directed, then pop in the microwave two at a time. Microwave on HIGH for 3 to 4 minutes, then flip and microwave for 3 to 4 minutes longer or until potatoes are tender.
