Instructions
- Heat oil in large deep saucepan or Dutch oven. Add pepper and onion; cook until veggies are tender crisp. Add Seasoning Mix, stock, water, beans, tomatoes and corn. Bring to boil. Reduce heat to low; simmer 15 minutes.
- Ladle into soup bowls. Sprinkle with tortilla chips. Serve with desired toppings.
Serving Suggestion: Serve with assorted toppings, such as chopped avocado, vegan shredded cheese, jalapeno peppers, pico de Gallo or salsa, chopped fresh cilantro and lime wedges.
Tab's Tip: Substitute 1 pound of plant-based ground meat in place of the black beans. Brown ground plant-based meat along with the veggies in Step 1 until fully cooked. Continue as directed.
