- Heat smoker to 225°F according to manufacturer's instructions. Mix brown sugar, salt, and seasonings in small bowl. Rub brisket all over with seasoning mixture.
- Place brisket on smoker grate, fat-side down. Smoke 4 to 5 hours, or until internal temperature reaches about 160°F.
- Remove brisket from smoker and wrap tightly with heavy-duty aluminum foil. Increase smoker temperature to 275°F.
- Return brisket to smoker and smoke 3 to 4 hours longer or until internal temperature reaches about 205°F. Remove from, smoker and let stand 30 minutes to 1 hour before slicing and serving.
