  1. For the Horchata: Rinse rice; drain. Place in a container with lid along with water and 1 cinnamon stick and soak for at least 4 hours or overnight. 

  2. Transfer soaked rice, cinnamon stick and water to blender. Blend until smooth. Strain mixture through a fine mesh sieve or cheesecloth into a pitcher. Stir in milk, sugar and vanilla. Set aside. 

  3. For the Cocktail: Rim the glass with a little simple syrup and dip in pumpkin pie spice. Combine 1 cup of the prepared horchata, pumpkin puree, spiced rum, pumpkin pie spice, and cinnamon in a cocktail shaker. Add ice and shake well for 10 to15 seconds until well mixed and chilled. Strain into prepared glass. Add ice if desired. Garnish with a cinnamon stick. Serve!
