Elevate your soup game with McCormick's hearty Italian wedding soup. Our expertly spiced meatballs are the stars, browned to perfection before joining a fragrant medley of onion, carrots, and celery, all infused with McCormick® Garlic Powder and Oregano Leaves.

Key products

  1. Gently combine the meatball ingredients (except the olive oil), don’t overwork the meat. Roll into 3/4-inch balls. 
  2. Heat 1 tablespoon of the olive oil in a large soup pot over medium-high heat. Brown half of the meatballs for about 4 minutes, turning occasionally. The middle of the meatballs will finish cooking in the soup. Remove and repeat with remaining olive oil and meatballs. 
  3. Add the onions, carrots, and celery to remaining fat in pan and cook on medium heat, stirring often, for about 6 minutes, until softened. 
  4. Add Garlic Powder, Oregano Leaves and wine and cook for 2 minutes till wine is almost cooked off. 
  5. Add stock and bring to boil. Add meatballs, greens and pasta. Let simmer till pasta is tender and greens are soft, about 10 to 12 minutes, depending on type of pasta. *If using spinach add after pasta is done cooking. 
  6. Ladle the soup into serving bowls and garnish with freshly grated Parmesan cheese, red pepper flakes and lemon wedges, if desired.
