- For the Syrup, mix sugar and water in small saucepan. Add strawberries. Bring to simmer on medium heat, stirring until sugar is dissolved. Simmer 8 to 10 minutes or until strawberries have broken down and mixture is slightly thickened. Remove from heat.
- Stir in vanilla. Cool slightly and strain through fine mesh strainer, pressing solids to remove as much syrup as possible. Set aside or store in airtight container in refrigerator until ready to use.
- For the Matcha Latte, sift matcha into a small bowl. Add hot water. Whisk (preferably with a bamboo whisk or handheld frother) until smooth and frothy. Pour strawberry syrup into bottom of a 12- to 16-ounce glass. Fill glass with ice. Add milk. Slowly pour matcha over milk. Stir to mix.
Test Kitchen Tips:
- To make a Strawberry Cold Foam topping, place 2 to 3 tablespoons heavy cream or barista-style oat milk and 1 tablespoon of the Strawberry Vanilla Syrup in a small bowl or measuring glass. Whisk vigorously or whip with a handheld frother until very foamy. Layer over top of latte to serve.
