- Preheat oven to 350°F. Pat pork dry with paper towels. Season on both sides with salt and pepper. Heat oil in large oven-safe nonstick pan on medium-high heat. Cook pork 4 to 5 minutes on one side, or until well browned. Flip pork chops and transfer skillet to oven.
- Bake until pork chops are cooked through to desired doneness (internal temp should reach 145°F), about 10 to 15 minutes. Remove skillet from oven. Remove pork; set aside to rest.
- Return skillet to stovetop on medium heat. Add vinegar, honey, Mustard and garlic powder, whisking to blend and scraping up brown bits from bottom of pan. Stir in broth. Bring to simmer; cook 3 to 5 minutes longer or until sauce is slightly thickened. Spoon over pork to serve.
