- Preheat oven to 350°F. Mix 2 cups of the flour, confectioners' sugar and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press mixture evenly onto bottom of greased, foil-lined 13x9-inch baking pan. Bake 15 to 18 minutes or until crust is lightly browned. Remove from oven.
- Meanwhile, mix granulated sugar and remaining 1/4 cup flour in large bowl. Add eggs, orange juice and lemon extract; mix with wire whisk until well blended. Gently pour filling over prepared crust.
- Bake 30 to 35 minutes or until filling is set. Cool in pan on wire rack. Cover.
- Refrigerate overnight. Lift out of pan onto cutting board. Cut into bars. Sprinkle with additional confectioners' sugar, if desired. Store leftover bars in refrigerator.
