  1. Preheat oven to 350°F. Mix 2 cups of the flour, confectioners' sugar and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press mixture evenly onto bottom of greased, foil-lined 13x9-inch baking pan. Bake 15 to 18 minutes or until crust is lightly browned. Remove from oven.
  2. Meanwhile, mix granulated sugar and remaining 1/4 cup flour in large bowl. Add eggs, orange juice and lemon extract; mix with wire whisk until well blended. Gently pour filling over prepared crust.
  3. Bake 30 to 35 minutes or until filling is set. Cool in pan on wire rack. Cover.
  4. Refrigerate overnight. Lift out of pan onto cutting board. Cut into bars. Sprinkle with additional confectioners' sugar, if desired. Store leftover bars in refrigerator.
