Ingredients

  • 2 tablespoons vegetable oil, divided - Substitutessesame oil
  • 3 large eggs, lightly beaten
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 piece (1-inch) fresh ginger root, peeled and grated (1 tablespoon grated) - Substitutes1 tablespoon Gourmet Garden™ Ginger Stir-in Paste
  • 2 cups frozen mixed carrots and peas
  • 1 cup chopped canned corned beef - Substituteschopped cooked ham
  • 1 cup cooked medium shrimp, peeled
  • 4 cups cold cooked jasmine rice
  • 2 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 4 1/2 teaspoons One Spice Seasoning from McCormick® One Piece Spice Kit
  • 3 medium green onions, trimmed and sliced
  • Fresh cilantro, to garnish

Instructions

  1. Heat 1 tablespoon of the oil in large wok or skillet on medium-high. Add eggs, scramble until set. Remove from skillet; set aside.
  2. Heat remaining 1 tablespoon oil in pan. Add onion, garlic and ginger; stir-fry until fragrant about 2 to 3 minutes. Add vegetables and stir-fry 2 to 3 minutes longer or until tender. Add corned beef and shrimp; stir-fry until heated through. 
  3. Add rice, stirring to break up any clumps. Stir-fry 3 to 4 minutes or until lightly browned. Return eggs to pan. Stir in soy sauce, oyster sauce and Seasoning. Stir-fry until well blended and heated through.
  4. Remove from heat and sprinkle with green onion and cilantro. Serve hot, straight from the pan, sprinkled with additional Seasoning.
