- Preheat oven to 250°F. Mix sugar, cinnamon, red pepper, and salt in a small bowl. Set aside.
- Beat egg white and vanilla in a medium bowl until foamy. Add walnuts and toss to coat. Add spice mixture and toss to coat the nuts evenly. Spread the nuts in a single layer on a greased baking sheet.
- Bake for 1 hour, stirring the nuts after 30 minutes. Cool slightly and break apart. Cool completely and store in an airtight container for up to 2 weeks.
