- Preheat oven to 350°F. Cook chorizo in large skillet until browned. Drain fat.
- Mix tomato sauce, water and spices in medium bowl. Spread 1/4 cup of the sauce mixture in bottom of 13x9-inch baking dish.
- Spoon 1/4 cup each chorizo and cheese down the center of each warm tortilla. Fold over tortilla sides; place seam-side down in baking dish. Pour remaining sauce over enchiladas. Sprinkle with remaining 1 cup cheese.
- Bake 20 minutes or until sauce is bubbly and cheese is melted. Serve with sour cream, if desired.
