- 5 tablespoons olive oil, divided
- 2 tablespoons McCormick® Flavor Maker Potato Topping Seasoning, divided

- Preheat oven to 450°F. Pierce potatoes several times with a fork. Place in microwave-safe bowl and cover with plastic wrap. Microwave on HIGH 4 to 6 minutes or until fork-tender. Keep covered and let stand about 10 minutes to cool.
- Drizzle potatoes evenly with 1 tablespoon of the olive oil, rolling to coat. Place potatoes on large foil-lined rimmed baking pan sprayed with no stick cooking spray. Use the bottom of a heavy measuring cup to smash potatoes to about 1/2-inch thickness. Drizzle evenly with 3 tablespoons of the remaining olive oil, then sprinkle with 1 tablespoon of the Flavor Maker Seasoning.
- Roast smashed potatoes about 30 minutes, until well-browned and crispy.
- Meanwhile, brush chicken with remaining 1 tablespoon olive oil. Sprinkle on both sides with remaining 1 tablespoon Flavor Maker Seasoning, pressing to coat. Heat large nonstick skillet on medium-high heat. Cook chicken 3 to 4 minutes per side or until browned and cooked through. Serve with smashed potatoes and salad, if desired.
