Instructions

  1. Preheat oven to 350°F. For the Filling, mix cherries, sugar and salt in medium saucepan. Mix cornstarch and lemon juice in small bowl until well blended. Add to saucepan, stirring to mix well. Cook on medium heat  8 to 10 minutes or until sugar is dissolved and cherries have softened slightly. Stir in almond extract. Pour filling into 2-quart baking dish sprayed with no stick cooking spray. Set aside. 
  2. For the Cobbler Topping, mix flour, sugar, cinnamon, baking powder, baking soda and salt in large bowl until well blended. Add buttermilk, butter and extracts, stirring just until well blended. Drop dough by heaping spoonfuls over top of cherry filling, spreading gently to cover.
  3. Bake 35 to 40 minutes or until filling is bubbly and topping is lightly browned (if topping begins to brown too quickly, tent loosely with foil). Serve warm with ice cream or fresh whipped cream, if desired. 

Test Kitchen Tip: Frozen Cherries? Increase cornstarch and lemon juice to 4 tablespoons each.
