  1. Use a mandolin or vegetable peeler to slice potatoes about 1/8-inch thick. Place in large bowl and cover with ice cold water. Refrigerate 15 minutes. Drain and rinse. Cover with fresh, cold water and soak 15 minutes longer.
  2. Drain well and pat potato slices very dry with paper towels. Place in dry bowl; drizzle with oil and sprinkle with Like Sweet Like Smoky Seasoning, tossing to coat evenly.
  3. Heat air fryer on 350°F for 3 minutes. Working in batches, if needed, place potato slices in air fryer basket in a single layer, with as little overlap as possible. Air fry 8 to 10 minutes, tossing to separate slices and flip over in basket halfway through cooking.
  4. Remove from air fryer and sprinkle immediately with additional Like Sweet Like Smoky Seasoning and a pinch of salt, if desired. Repeat with remaining potatoes, if needed.
