- Cook pasta in salted water until al dente. Drain well, reserving 1/4 cup of the pasta water.
- Heat oil in large skillet on medium-low heat. Add shallot and garlic; cook and stir 1 to 2 minutes or until fragrant. Stir in 1 teaspoon of the Italian Seasoning; cook 30 seconds to bloom herbs.
- Increase heat to medium. Add tomatoes; cook, stirring occasionally until blistered and lightly charred. Add olives, capers, remaining Italian seasoning, and crushed red pepper; cook and stir 1 to 2 minutes longer to allow flavors to blend. Remove from heat. Stir in 2 tablespoons of the reserved pasta water.
- Place hot cooked pasta in large serving bowl. Add tomato mixture, tossing gently to mix. Stir in additional reserved pasta water, if desired to loosen. Sprinkle with parsley and garnish with shaved parmesan cheese, to serve.
