Instructions

  1. Mix all ingredients for Blackened Seasoning Blend in small bowl until combined. Set aside. (Store leftover Blend in an airtight container in cool, dry location for up to 2 months.)
  2. Pat shrimp dry with paper towels and place in medium bowl. Sprinkle shrimp with 4 teaspoons of the Blackened Seasoning, tossing to coat evenly. Cover and refrigerate until ready to use.
  3. Place chicken stock and cream in large saucepot. Bring to boil on medium-high heat. Slowly stir in grits. Return to boil, then reduce heat to medium-low. Cover and cook 10 to 15 minutes, stirring occasionally. Once all of the liquid has been absorbed and the grits are tender, stir in shredded cheese, salt and pepper. Remove from heat and stir in butter, just until well blended.  
  4. Meanwhile, heat oil for shrimp in large skillet on medium heat. Working in batches, place shrimp in skillet in single layer, being sure not to overcrowd the skillet. Cook shrimp about 2 minutes per side, just until slightly pink. Remove and set aside. 
  5. Reduce heat to low; add garlic and shallots. Cook and stir until softened, about 3 to 5 minutes. Stir in white wine. Simmer until reduced by about half. Return shrimp to skillet and add lemon juice. Simmer just until shrimp are cooked through.  
  6. Remove from heat; stir in butter, tomatoes, green onion and remaining 1 teaspoon Blackened Seasoning. Spoon Cheesy Grits into serving bowls. Top with Blackened Shrimp. Sprinkle with crisply cooked bacon lardons to serve, if desired.
