  1. Mix mint, oregano, garlic, coriander, paprika, pepper and salt in small bowl. Place pork in resealable plastic bag or glass dish. Add 1/3 cup of the oil and 3 tablespoons of the seasoning mixture. Cover and refrigerate at least 1 hour or overnight. Reserve remaining seasoning for Tzatziki.  

  2. Place one oven rack 6 inches from broiler and another rack in center of oven. Preheat oven to 350°F. Line rimmed baking sheet with foil. Set wire rack over top. Arrange pork in single layer on rack. Cover tightly with foil 

  3. Roast pork on center oven rack 40 minutes or until internal temperature reaches 100°F. Remove foil and roast 20 to 25 minutes longer.  

  4. Meanwhile, for the Tzatziki Sauce, cut cucumber in half lengthwise. Thinly slice one half of the cucumber; set aside until ready to serve. Shred remaining half of cucumber using large holes of box grater. Mix shredded cucumber, yogurt, olive oil, lemon juice, and remaining Seasoning Blend in medium bowl. Refrigerate until ready to serve. 

  5. Transfer pork to top oven rack. Broil 5 minutes or until well browned. Transfer to cutting board and let rest 5 minutes.  

  6. Brush pitas with remaining 1 tablespoon oil. Broil pitas about 1 minute until lightly browned and warmed. 

  7. To serve, slice pork across the grain into thin slices. Serve pork with pitas, romaine, sliced cucumber, onions and Tzatziki.
