For the Butter, toast caraway seeds in small skillet on medium heat about 30 seconds or until fragrant. Add butter. Cook and stir until completely melted. Remove from heat. Transfer melted butter mixture to small bowl. Add honey and salt. Place bowl over top of an ice bath and whisk just until butter touching sides of bowl begin to solidify. Remove from ice bath and continue to whisk until creamy. Set aside or refrigerate until ready to serve.

For the Bread, preheat oven to 350°F. Mix flour, sugar, baking powder, baking soda, caraway seed, cinnamon and salt in large bowl. Stir in currants; set aside. Mix buttermilk, sour cream and eggs in separate medium bowl. Add to dry ingredients; mix until blended and dough comes together.

Divide dough into 2 equal portions. Shape each into a ball. Place on parchment lined large baking sheet. Score an ‘x’ on top of each loaf.

Bake 45 to 50 minutes or until toothpick inserted in center comes out clean and top is golden brown. Transfer loaves to wire rack. Allow to cool before slicing. Serve Soda Bread with Caraway Infused Butter.
