- For the Onions, mix flour, thyme, salt, pepper and brown sugar in shallow dish. Coat onion slices in flour mixture, being careful to keep slices intact. Heat oil and butter in large heavy-bottom skillet on medium heat. Add onion slices and sprinkle with any remaining flour mixture. Cook 4 to 6 minutes per side until well browned.
- Drain excess oil from skillet. Reduce heat to low; add 3/4 cup of the stock. Cover and cook 10 to 12 minutes or until onions are very tender, adding additional stock as needed to prevent over browning. Sprinkle tops of onion slices evenly with cheese. Cover. Cook just until cheese is melted. Remove cheesy onions from pan; set aside, cover to keep warm.
- Meanwhile, whisk remaining 1/2 cup beef stock and cornstarch in small glass measuring cup. Add to skillet; bring to simmer. Cook until thickened. Keep warm.
- For the burgers, mix all ingredients (except rolls) in medium bowl, just until blended. Shape into 4 even patties. Grill over medium-high heat until desired doneness. Meanwhile, toast rolls on grill alongside burgers. Serve burgers on rolls, topped with cheesy onions and arugula. Drizzle generously with pan sauce and top with additional Gruyere, if desired.
