Preheat oven to 350°F. Grease 13x9-inch baking pan and line with parchment, allowing for excess paper to hang over sides. Set aside. Mix flour, pistachios, sugar, lemon peel, vanilla, salt and melted better together in bowl until combined. Press mixture evenly onto bottom prepared pan. Bake 20 to 25 minutes or until crust is golden brown. Remove from oven.

Meanwhile, mix granulated sugar and flour in large bowl. Add eggs, lemon juice and lemon peel; mix with wire whisk until well blended. Gently pour filling over prepared crust.

Bake 22 to 25 minutes or until filling is set. Cool in pan on wire rack. Cover. Refrigerate overnight. Remove from pan using parchment handles and place on cutting board. Cut into bars. Sprinkle with confectioners' sugar to serve. Store leftover bars in refrigerator.
