- Whisk eggs, salt and Chives in bowl just until whites and yolks are blended.
- Melt butter in medium nonstick skillet (about 8-inches) on medium heat, swirling skillet to spread butter evenly. Add eggs. Cook, stirring constantly with rubber spatula to break up any large curds, just until eggs begin to set. Immediately remove skillet from heat.
- Use rubber spatula to smooth egg mixture into an even layer. Sprinkle cheese down center of eggs, perpendicular to handle of pan. Cover with lid 1 minute. Remove lid and loosen edges of egg from skillet using spatula.
- Holding the skillet handle with your non-dominant hand, use the spatula to gently lift edge of eggs closest to the handle. Begin to roll the eggs away from you, over the cheese, tipping the pan slightly to encourage them to fold over about one-third of the way. Repeat to roll again, folding over the remaining third. Carefully slide omelet out of skillet and onto serving plate. Brush lightly with melted butter, if desired. Serve immediately.
