  1. Bring milk, cream, cloves, cinnamon stick, vanilla bean seeds and pod, and nutmeg to a gentle boil in medium saucepan on medium-low heat.
  2. Whisk egg yolks and sugar in medium bowl until pale yellow in color and fluffy. Gradually add 1 cup of the hot milk mixture to bowl with egg yolks, whisking vigorously until well blended. Slowly whisk tempered egg mixture back into the remaining milk mixture in saucepan.
  3. Cook and stir on medium-low heat 3 to 5 minutes or until mixture thickens to coat the back of a spoon. (Do not allow mixture to boil, as this will cause eggs to curdle.) Remove from heat.
  4. Strain hot mixture through mesh sieve lined with cheesecloth into large heat-safe pitcher or clean glass jars with lids, discarding whole spices and vanilla bean pod. Cool slightly. Cover or close lids. Refrigerate overnight or until well chilled. Stir or shake before serving.
