  1. For the Mornay Sauce, melt butter on low heat in medium saucepan. Add flour; cook and stir 5 minutes, without browning. Gradually whisk in cold milk; bring to boil, stirring to remove any lumps. Stir in Gruyere, Parmesan, salt and nutmeg just until cheese is melted. Remove from heat immediately. Set aside. 
  2. To assemble Croque Monsieur, preheat broiler on LOW. Place oven rack 6-inches from heating element. Arrange bread in single layer on large baking sheet sprayed with no stick cooking spray. Broil 1 minute per side or just until lightly toasted.
  3. Spread a thin layer of Dijon on tops of 6 slices of the bread. Spoon 2 tablespoons of Mornay Sauce over Dijon. Layer sliced ham and 1 1/2 cups of the Gruyere over top. Top with remaining bread slices. Spoon remaining Mornay sauce over each sandwich. Sprinkle remaining Gruyere over top.
  4. Broil on LOW, watching closely, just until cheese is melted and lightly browned. Season with black pepper before serving.
