- For the Mornay Sauce, melt butter on low heat in medium saucepan. Add flour; cook and stir 5 minutes, without browning. Gradually whisk in cold milk; bring to boil, stirring to remove any lumps. Stir in Gruyere, Parmesan, salt and nutmeg just until cheese is melted. Remove from heat immediately. Set aside.
- To assemble Croque Monsieur, preheat broiler on LOW. Place oven rack 6-inches from heating element. Arrange bread in single layer on large baking sheet sprayed with no stick cooking spray. Broil 1 minute per side or just until lightly toasted.
- Spread a thin layer of Dijon on tops of 6 slices of the bread. Spoon 2 tablespoons of Mornay Sauce over Dijon. Layer sliced ham and 1 1/2 cups of the Gruyere over top. Top with remaining bread slices. Spoon remaining Mornay sauce over each sandwich. Sprinkle remaining Gruyere over top.
- Broil on LOW, watching closely, just until cheese is melted and lightly browned. Season with black pepper before serving.
