- Place butter in small saucepan on medium heat. Stir frequently until completely melted. Increase heat to medium-high. Cook, stirring frequently, until milk solids are well browned and butter has a nutty fragrance. Remove from heat immediately when no longer foamy. Whisk in vodka; add 1 cinnamon stick and peppercorns. Let stand 15 minutes. Transfer to clean glass jar or large measuring cup. Place in freezer for 1 hour.
- Strain butter washed-vodka mixture through fine mesh sieve lined with cheesecloth into cocktail shaker filled with ice. Add vermouth. Shake vigorously until well mixed and chilled.
- Mix cracked black pepper and demerara sugar in small shallow dish. Brush rims of 6 rocks glasses with maple syrup. Dip in sugar mixture to coat. Fill glasses with ice.
- Strain cocktail glasses. Garnish with cinnamon sticks. Sprinkle lightly with McCormick Gourmet™ Cracked Black Pepper to serve, if desired.
