Ingredients
- 1 ripe avocado, peeled, pitted and mashed
- 3/4 cup goat cheese, softened
- 1 1/2 teaspoons McCormick® Salt Free Onion and Herb Seasoning, plus more for serving
- 1 teaspoon lemon juice
- 1/2 teaspoon salt, (optional)
- 1/4 teaspoon McCormick® Coarse Ground Black Pepper
- 4 slices whole grain bread, toasted
- 2 cups spring mix salad greens
- 4 large eggs, poached
INSTRUCTIONS
- 1 Mix avocado, goat cheese, Salt Free Onion & Herb Seasoning, lemon juice, salt and black pepper in a medium bowl.
- 2 Spread 1/4 of the avocado mixture evenly over each piece of toast. Top each slice with spring mix, 1 poached egg and sprinkle with additional Salt Free Onion & Herb Seasoning, if desired.
- 3 Not sure how to poach eggs? Fill large deep saucepan with 2 inches of water. Add 1 tablespoon vinegar. Bring to boil. Reduce heat to medium. Break 1 egg into small dish. Gently stir water in one spot and carefully slide egg into simmering water (small bubbles should just begin to break the surface of the water). Repeat with remaining eggs. Poach eggs 3 to 5 minutes or until whites are completely set and yolks begin to thicken. Carefully remove eggs with slotted spoon. Drain on paper towels, if desired.
