Makes 8 servings.
YOU WILL NEED
1 pkg. McCormick Seasoning Mix
1 1/2 lbs. boneless skinless chicken breasts
2 cups frozen or fresh bell pepper strips
1 1/2 cups frozen corn
2 tbsp. cider vinegar
2 tbsp. oil
2 tbsp. water
Assorted Toppings: shredded cheese, chopped tomatoes, chopped avocados, sour cream, chopped cilantro or green onions
1. PLACE chicken and vegetables in slow cooker.
2. MIX Seasoning Mix, vinegar, oil and water in bowl until blended. Pour over chicken and vegetables; stir to coat. Cover.
3. COOK 6 hours on LOW or 3 hours on HIGH or until chicken is cooked through. Remove chicken from slow cooker.
4. SHRED chicken, using 2 forks. Return chicken to slow cooker; mix well with vegetables. Serve over cooked rice or in warm tortillas with desired toppings.
Slow Cooker Tip: For best results, do not remove cover during cooking.
