Coquito Arroz Con Leche for Shared Moments
For Coquito mixture, place 2 1/2 cups coconut cream, 2 cups coconut milk, 1/2 cup rum (optional), 1/4 cup coconut sugar, 3 tbsp. honey, 3 tsp. McCormick® Pure Vanilla Extract, and 1 tsp. McCormick® Ground Cinnamon in blender. Cover; process until well blended.
Place 2 cups Coquito and 1 cup jasmine rice (soaked) in saucepan. Add 1 tsp. McCormick® Pure Vanilla Extract, 1/2 tsp. McCormick® Ground Cinnamon, 1/4 tsp. McCormick® Ground Cloves and 1/4 tsp. orange zest. Bring to boil; reduce heat; simmer 15 minutes. Remove from heat. Stir in 2 cups Coquito and 1/3 cup raisins. Let stand 5 minutes. Sprinkle with Ground Cinnamon to serve.

Tostones Everyone Reaches For
Peel 4 green plantains and cut into thirds. Place in saucepan with salted water to cover; bring to boil. Cook until soft enough to pierce with a fork. Drain; cool slightly. Cut into 1-inch thick slices. Smash plantain slices between sheets of wax paper until flattened. Brush with 1/4 cup oil and sprinkle with 1/4 tsp. McCormick® Complete Seasoning. Working in batches, air fry at 400°F 15 minutes or until crispy. Sprinkle with McCormick® Sea Salt Grinder.
For the Chimichurri, mix 1/2 cup each finely chopped fresh dill, green onion, and mint leaves, 1/4 cup olive oil, 1/2
tsp. salt, 1/4 tsp. McCormick® Garlic Powder, and zest and juice of 1 lemon.
For the Avocado Mash, smash 2 peeled and pitted avocados. Mix with juice of 1 lemon, 1 tsp. olive oil, 1/2 tsp. salt and 1/8 tsp. McCormick® Garlic Powder. Serve Tostones with Chimichurri and Avocado Mash!
