  • 1 teaspoon salt
  • 1 cup crumbled feta cheese
  • 2 green onions, trimmed and finely chopped
  • 2 large eggs, lightly beaten
  • 1 teaspoon McCormick® Garlic Powder
  • 3/4 teaspoon McCormick® Dill Weed
  • 1/2 teaspoon McCormick® Onion Powder
  • 1/4 teaspoon McCormick® Pure Ground Black Pepper
  • 1/2 cup all-purpose flour
  • 6 tablespoons oil, divided

Instructions

  1. Shred zucchini on the large holes of a box grater. Toss shredded zucchini with salt in colander set over a large bowl. Let stand 10 minutes to drain. Wrap the zucchini in paper towels or a clean tea towel and squeeze out excess liquid until zucchini is very dry.
  2. Mix zucchini, feta, green onion, eggs, garlic powder, dill, onion powder and pepper in medium bowl. Sprinkle flour over the mixture and stir until well blended. 
  3. Heat 3 tablespoons of the oil in large skillet on medium heat until shimmering. Drop 2-tablespoon portions of the batter into hot pan, spreading into 2-inch circles. Fry until golden brown on both sides, about 2 to 3 minutes per side.
  4. Transfer fritters to paper towel-lined plate; keep warm. Repeat with remaining batter. Serve Fritters warm or at room temperature. Garnish with additional sliced green onions and lemon wedges to serve, if desired.
