- Whisk soy sauce, sriracha, garlic powder, sugar, cornstarch, ginger, crushed red pepper, and 1 teaspoon of the oil in small bowl; set aside.
- Heat remaining 1 tablespoon oil in large skillet on medium heat. Add bok choy and water; cover immediately. Cook, shaking pan occasionally, 2 minutes. Remove lid; cook, stirring constantly, until water has evaporated bok choy is tender crisp, about 2 minutes longer.
- Add soy sauce mixture and cook, stirring constantly, just until sauce is thickened and coats bok choy. Remove from skillet and serve warm.
