- 1 pound boneless skinless chicken thighs
- 2 cloves garlic, finely chopped

- 1 medium onion, sliced

- 2 tablespoons brining liquid from jar of olives

- Heat oil in Dutch oven or large saucepan on medium-high heat. Add chicken; cook 4 to 6 minutes per side or until browned.
- Stir in remaining ingredients. Bring to boil. Reduce heat to medium-low; cover and simmer 20 minutes or until vegetables are tender. Serve over cooked couscous with lemon wedges, if desired.
