  1. Preheat smoker to 250°F as directed by manufacturer's instructions. Add a thin layer of oil and season pork with Bourbon & Oak Seasoning. Smoke pork 8 to 10 hours or until internal temperature reaches 203°F.
  2. Once the internal temperature of the pork reaches about 203°F, remove pork from smoker. Let rest 30 to 45 minutes.
  3. Meanwhile, for the Slaw, combine all ingredients in a large bowl. Cover and refrigerate until ready to serve.
  4. Shred pork and remove bone.Shape the shredded pork into handful size balls. Place on a preheated hot skillet or flat top grill with oil. Smash pork using large heavy spatula to flatten like you would for a smash burger.
  5. Season the patties immediately with a sprinkle of Signature Blend Seasoning. Flip when a crust has formed, pressing down firmly again so the crust begins to develop on the other side. Season with an additional sprinkle of Signature Blend Seasoning. Top each patty with cheese.
  6. To assemble, spread BBQ sauce on cut-sides of rolls. Place 2 patties on each roll. Top with Tangy Coleslaw,  pickled jalapenos and any other toppings you like!
