  1. Preheat oven to 350°F. Using kitchen shears, cut around edges of each pita to separate into 2 thin rounds.
  2. Brush pitas generously on both sides with oil. Sprinkle smooth sides with Greek Seasoning. Stack rounds and cut into 8 wedges. Arrange pita pieces, smooth side down, in single layer on 2 large sheet pans. 
  3. Bake until pitas are golden brown and crispy, about 10 to 15 minutes, rotating pans halfway through baking. Cool completely before serving. Serve as a snack, use for dipping hummus, tzatziki or feta dip, or use to top bowls and salads.
