- 1/4 cup olive oil
- 3 tablespoons white balsamic vinegar
- 2 tablespoons French's® Chardonnay Dijon Mustard Squeeze Bottle

- 1 cup dried green lentils
- 2 1/2 cups water
- 4 lacinato kale leaves, washed well, stems removed, leaves chopped into 1-inch pieces
- 3 baby cucumbers, halved lengthwise and thinly sliced
- 1 cup yellow grape tomatoes, halved
- 1/2 cup finely chopped red onion
- 4 red radishes, washed and thinly sliced

- For the Vinaigrette, whisk all ingredients in small bowl until well blended. Set aside.
- For the Lentil Salad, rinse and drain lentils. Place in medium saucepan. Add water and bring to boil. Reduce heat to low. Cover and simmer 20 minutes or until tender. Drain and rinse under cold water. Let drain 15 minutes.
- To assemble salad, place cooked and cooled lentils, kale, cucumbers, tomatoes, red onion, radish and feta in large serving bowl. Drizzle with vinaigrette and toss gently toss to mix. Cover. Refrigerate 1 hour before serving.
