  • 1 1/2 pounds skinless boneless chicken breast, cut into thin cutlets
  • 2 tablespoons oil
  • Juice of 1 lime
  • 2 teaspoons McCormick® Honey Chipotle Finishing Salt
  • Ranch Dressing
  • 1/3 cup plain Greek yogurt
  • 1/4 cup lemon juice
  • 1 teaspoon McCormick® Ranch Finishing Salt
  • 1 tablespoon honey
  • 1/4 cup oil
  • 2 tablespoons water
  • Salad
  • 1 large head Romaine lettuce, washed, trimmed and chopped
  • 1/4 cup cherry tomatoes, cut in half
  • 1/4 cup cilantro, roughly chopped
  • 1/2 red onion, chopped
  • 1/4 cup crumbled feta cheese

  1. Mix chicken, oil, lime juice and Honey Chipotle Finishing Salt in a large bowl until well blended. Refrigerate 1 hour. Remove from marinade; discard any remaining marinade.
  2. Meanwhile, for the Ranch Dressing, mix all ingredients in small bowl or jar. Refrigerate until ready to serve.
  3. Grill chicken over medium-high heat 6 to 8 minutes per side, or until cooked through. (Internal temperature should reach 165°F.) Let rest for 10 minutes.Cut chicken into thin slices.
  4. To serve, divide lettuce evenly among serving plates or bowls. Top with cherry tomatoes, cilantro, onion, feta cheese and chicken. Drizzle with Ranch Dressing.
