Instructions

  1. Place oats and 1/2 cup of the coconut in bowl of food processor. Cover and pulse until finely ground. Add dates, nut butter, cinnamon, vanilla and salt. Cover and process until well blended and mixture comes together. 
  2. Transfer to a small bowl and stir in chocolate chips. Scoop mixture into 1-inch balls. Roll in remaining 1/4 cup coconut to coat.
  3. Place in an airtight container and refrigerate at least 30 minutes or until firm.
