- Preheat oven to 375°F. Line a large rimmed baking sheet with parchment paper. Place cottage cheese in a blender container; cover. Blend about 30 seconds on high speed, scraping down sides as needed until smooth.
- Transfer cottage cheese to medium bowl. Add flour, stirring just until mixture comes together to form a shaggy dough mass. Turn out onto lightly floured surface. Knead about 30 seconds to 1 minute, sprinkling lightly with additional flour as needed, until no longer sticky. Shape dough into a ball. Let rest 10 minutes.
- Divide dough into 8 equal pieces. Roll each piece into a 7-inch rope and pinch ends together. Transfer bagels to prepared baking sheet and brush with egg. Sprinkle with everything bagel seasoning, sesame seeds, poppy seeds, or cinnamon sugar, as desired.
- Bake 25 to 28 minutes or until tops are lightly browned and bagels are puffed. Cool on wire rack 10 minutes before serving or cool completely and store in an air-tight container in refrigerator up to 1 week. Serve with your favorite spread or use for Breakfast Sandwiches.
Test Kitchen Tip: Don’t have self-rising flour on hand? Mix 2 cups all-purpose flour, 3 teaspoons baking powder, and 1/2 teaspoon salt. Use as directed. (For dusting work surface and kneading dough, additional all-purpose flour will do the trick.)
To make Jalapeno Cheddar Cottage Cheese Bagels, stir 1 cup finely shredded Cheddar cheese and 1 1/2 teaspoons McCormick® Crushed Jalapeño Peppers into cottage cheese before mixing with flour. Shape bagels as directed and sprinkle top of each bagel with an additional 2 tablespoons shredded Cheddar. Bake as directed.
