- For the Blueberry Lemon Granola, preheat oven to 325°F. Mix oil, syrup, Finishing Sugar, vanilla, and salt in a large bowl. Add oats, pepitas, coconut and pecans; toss until evenly coated. Spread on foil-lined 15x10x1-inch baking pan, pressing into an even, thin layer.
- Bake 25 to 30 minutes, or until lightly browned. Cool completely on pan on wire rack. Break up cooled granola into bite-size pieces. Store in airtight container up to 1 week.
- For the Blueberry Lemon Yogurt, mix yogurt and Finishing Sugar in a small bowl.
- To assemble parfaits, spoon 1/4 cup yogurt mixture into 4 small glasses or bowls. Top with granola and layer with another 1/4 cup yogurt and sprinkle additional granola over top. Garnish with blueberries, if desired.
