Caribbean Rice with Jerk Chicken and Green Beans and Mushrooms

Take a departure from the usual Sunday dinner roast and head over to the Caribbean islands. An exotic side of Zatarain’s® Caribbean Rice Mix perfectly compliment Jerk Chicken and vegetables seasoned with McCormick® Perfect Pinch® Caribbean Jerk Seasoning. Recipe credit: Jeremy Miller.

  • For the Rice, prepare Rice Mix according to package directions.

  • Meanwhile, for the Chicken, brush chicken with 1 tablespoon of the olive oil. Sprinkle evenly with 1 tablespoon of the Seasoning. Cover and refrigerate until ready to cook.

  • For the Green Beans and Mushrooms, heat 2 teaspoons oil in large nonstick skillet on medium heat. Add mushrooms; cook and stir 2 minutes. Add green beans; cook and stir 10 minutes or until tender-crisp. Sprinkle with 1 teaspoon Seasoning.

  • Heat remaining 1 tablespoon oil in cast iron skillet on medium heat. Add seasoned chicken; cook 3 to 5 minutes per side or until chicken is cooked through. Serve chicken with rice and vegetables.

Cooking tip

For spicy flavor, add McCormick® Crushed Red Pepper to chicken and/or vegetables to taste, if desired.
